Summer Oatmeal for Meatless Monday

I love oatmeal topped with chia seeds and fruit to add an extra dose of protein and fiber to keep me full for hours.  In the summer months, I’ll top with all kinds of fruit like nectarines, blueberries, raspberries, strawberries. etc.
