Summer Protein Salad

One of my favorite summer salads that’s easy to make, filled with protein, and so tasty is a black bean and corn salad.  If you want extra flavor, grill the corn first before adding to the salad.  Add other ingredients like tomatoes, avocados, cilantro, bell pepper, lemon, salt, garlic and serve with multigrain (or your favorite healthy brand) tostada chips.
