In honor of National Taco Day, I made this low fat, high protein, Nacho Soup last night! To make, you’ll need 2 can of diced tomatoes, one package roasted corn, 3 different types of beans (I used kinder, aduki and black), 2 closed garlic diced, 3 green onions chopped and cilantro, avocado and tofutti sour cream for the toppings. Season with 1 package taco seasoning, 1 tablespoon chili powder, a dash of cumin and sea salt and fresh pepper. Cook in the slow cooker for 3 hours and then grab your favorite tortilla chips for dipping!
